Bio-Oz Buckwheat Rock Cakes (Gluten Free and Dairy free)

With the first wintery days arriving it's time to baking to try this easy recipe - perfect for those cool (or freezing) autumn days.

Ingredients

  • 2 cups Bio-Oz Buckwheat Flour

  • 2 heaped tsp baking powder (GF)

  • 1 level tsp salt

  • 1 1/2 cups sultanas and/ or raisins

  • 2 level tbsp linseeds

  • 2 level tbsp sunflower seeds

  • 1/2 raw sugar

  • 2 eggs

  • 3 tbsp olive oil (extra virgin)

  • 3 tbsp water

Takes 15 minutes prep, 30 minutes cooking time, serves 10-12.

Instructions

  1. Preheat oven to 180C and grease, or line with baking paper, a 26cm x 38cm baking tray.

  2. Combine dry ingredients, seeds and fruit.

  3. Add eggs, water and oil and mix to a stiff dough.

  4. Form approx 10 - 12 large balls and place on greased tray.

  5. Bake approx 1/2 hour until golden, allow to cool on a wire rack.

  6. Enjoy warm or cold.

  7. Store in an airtight container.

  8. The recipe can be doubled.
